Domaine De L'Hyverniere
Loire Valley

A celebrated name in the Loire Valley, this estate at the turn of the 20th Century was the largest vineyard in the Nantes region. Dismantled after World War I, the Sautejeau family managed to rebuild it and bring it back to its former glory.

- Appellation: Sèvre-et-Maine (named after the two main rivers in the area)

- Climate: oceanic (winds from the Atlantic Ocean)

The Estate

- Location: in the village of Le Pallet, south of Nantes

- Soil: a mixture of sand, clay, silica, schist and gneiss

- Varietal: 100% Melon de Bourgogne (imported from Burgundy in the 17th Century)

Vinification

- fermentation under controlled temperature to preserve all wine aromas

- one racking after fermentation to eliminate the “gross lees” (mineral or vegetal matter)

- only the “fine lees” are left

- bottled directly off its lees in Spring

- legal date for bottling: as of March 1

Sur-Lie Process

- the lees (dead yeast cells or “fine lees”) fall to the bottom after alcoholic fermentation

- they create amino acids that combine with polysaccharides

- a small amount of carbon dioxide is trapped by the lees

- this aging “sur lie” prevents oxidation

- the result is a fleshier body, with a lovely “prickle” (light sparkling sensation)

The Wine

- Limpid, pale green color

- Complex aromatic structure (roses and lilies)

- Subtle and relatively low in acid but extremely lively on the palate

- Serving Suggestions: the ideal accompaniment to all shellfish (oysters, clams, mussels, etc.), fish in beurre blanc sauce, saucisses au Muscadet (sausages in Muscadet)
