Winemaker's Notes: Our 2004 Sauvignon Blanc is
a complex and crisp wine with flavours of cut green grass, bell
pepper aromas with hints of spice and gooseberries. This bright,
pale green coloured wine also has a racy acidity with a wonderful
long finish.
Vintage: The 2004 vintage was a terrific year
for the grapes. We had a nice cold winter to allow the grapes to
mature ever so slowly, retaining all the acidity and concentrating
the typical herbaceous Sauvignon Blanc aromas. We harvested all
our grapes by mid – February. With the warm sunny days at
harvest, there was no problem in achieving the average Brix of 23
while retaining the desired acid levels. The grapes were harvested
at an average pH of 3.25.
Vineyard: Most of the grapes came from 2 different
vineyards, with the major share from the one near Dindori, about
50 kms away from the estate. This particular vineyard has red soil
with lots of gravels and small loose rocks. The other vineyard at
the estate has a sandy clay soil. The vines were earlier pruned
in the first week of October. The canopy characteristics at the
2 vineyards varied only slightly with all vineyards using the open
U trellis system.
Fermentation and Aging: The grapes were whole
cluster pressed gently and the juice was chilled to about 6°
C. The lees were removed and the juice was inoculated. The fermentation
of the juice was done in stainless steel tanks over a period of
20 -25 days. The wine settled for about 2 months, during which they
were racked a couple of times. Finally the different lots were blended,
fined, stabilized and filtered.
Chef's suggestions: The 2004 Sauvignon Blanc is
a wonderful wine to have with spicy Indian and Oriental food. It
can also be enjoyed with seafood.

Winemaker's Notes: Our 2004 Chenin Blanc is an
off-dry wine with tropical fruit aromas and mineral notes. This
pale coloured wine also has a nice acidity to balance the residual
sugar. It has a good long finish.
Vintage: The 2004 vintage was a terrific year
for the grapes. We had a really good monsoon followed by a nice
cold winter to allow the grapes to mature slowly, retaining all
the acidity. Harvest of all our Chenin ended by mid – March,
early summer here, to get good maturity levels. With the warm sunny
days and cool nights at harvest, there was no problem in achieving
the average Brix of 22.5 while retaining the desired acid levels.
The grapes were harvested at an average pH of 3.35.
Vineyard: The grapes came from different vineyards
with differing soils of clay, sandy clay, fine gravel, and differing
microclimates, all within a radius of 50 kms from the estate. The
vines were earlier pruned in the first week of October. The canopy
characteristics varied only slightly between all vineyards.
Fermentation and Aging: The grapes were whole
cluster pressed gently and the juice was chilled to about 6°
C. The lees were removed and the juice was inoculated. A controlled
fermentation of the juice was done in stainless steel tanks over
a period of 35-40 days. The wine settled for about 2 months, during
which they were racked a couple of times. Finally the different

Chef's suggestions: The 2004 Chenin Blanc is a
good aperitif wine and can be matched with moderate spicy Indian
food. It would also go well with baked pumpkin and cheese.

Our first estate-bottled premium red wine, Sula Vineyards Cabernet
Shiraz, is a blend of 80% Cabernet Sauvignon and 20% Shiraz grapes
grown on Sula's estate vineyards.
The Cabernet Sauvignon cuttings were originally brought in from
France, while the Shiraz cuttings were from Australia. The vines
are planted on the red slopes of Dindori in Nashik district, possibly
the finest "terroir" for red wine grapes in India.
Ripe cherry and plum fruit with peppery notes mark this smooth,
medium-bodied red wine. With nuances of oak, this deep purple wine
has great balance and a lingering finish.
Chef's suggestions: Pairs well with tandoori and
tikka sauces, and lightly spiced curries.
Best served lightly chilled. Uncork and allow to breathe before
serving.

Zinfandel grapes.
The skins are left in contact with the freshly pressed juice overnight
to extract the perfect pink hue. It is light and fruity, with vibrant
aromas and flavours of honeysuckle and fresh berries.
This refreshing "anytime" wine is very versatile in food
pairing; it goes particularly well with poultry and spicy dishes.
