Few companies, in Switzerland or elsewhere, can boast D'Auvernier's 400 years of family history. Keeping the estate in the family has always been a priority. Today, owner Thierry Grosjean, is reorganizing the estate and introducing integrated culture, a respectful approach to the environment which makes it possible to decrease the spreading of chemicals and spare the soil. In 1999, a barrel storeroom was built with 220-litre barrels for certain wine specialties matured "in the cask."

DESCRIPTION: The Chasselas Fendant Roux is of Oriental origin and was brought back to Switzerland by the Crusaders. The grapes are harvested by hand. After being carefully cleaned, yeast is added to the must, then it is fermented at a carefully regulated temperature of about 18°C. The maturing of this wine on fine lees at a low temperature enables us to preserve its slightly sparkling character on the tongue.

GRAPE VARIETY: Chasselas Fendant Roux

FOOD PAIRINGS: This is a cheerful wine. Just the thing for aperitifs. It goes well with grilled or broiled fish and all kinds of shellfish. Perfect with cheese, it rounds off the evening on a joyful note.

TASTING NOTES: The Neuchâtel Blanc, which is light in color with an aroma of lime, is a light fruity wine with just a hint of a sparkle due to its maturing on lees. To be consumed within three years. Serving temperature 50°F.

DESCRIPTION: The Oeil de Perdrix, which is derived from the Pinot Noir vine by a short fermentation, generally of one night, is typically a Neuchâtel wine that is often imitated, but never equalled.

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: It accompanies all manner of dishes, from the aperitif to the dessert. For a restaurant meal, it will please both, fish and meat lovers, allowing them to commune over the same wine. Grills, poultry or exotic dishes suit it perfectly. Salmon pink in colour and raspberry-like in bouquet, this is a lively wine, exuding the aromas of Pinot Noir. To be consumed within 3 years. Serving temperature 50°F

TASTING NOTES: Very pale in color with explosive cherry and strawberry flavors in the mouth. A wonderful dry rose with just a slight hint of residual sugar.

DESCRIPTION: This white wine is called Pinot Beurot in Burgundy, Malvoisie in Valais, formerly Tokay in Alsace or Pinot Grigio in the south.

GRAPE VARIETY: Pinot Gris

FOOD PAIRINGS: It is much appreciated with fish in sauce and provides a surprising accompaniment to a blanquette of veal or a farm capon. It has no trouble blending with cheeses of character, even after a red wine. Lays down for 1 to 5 years Serving temperature 8-10°C

TASTING NOTES: Rich, full-bodied and complex, the Pinot Gris is harvested very mature. It gives a dry wine of dark golden hue.This full, sparkling wine puts a wonderful finishing touch to a meal.

DESCRIPTION: The Pinot Noir is the Prince of our production. It is the only red vine entitled to bear the appellation of controlled origin label (AOC) in the canton of Neuchâtel.

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: Perfectly accompanies poultry and red meats.

TASTING NOTES: This wine, ruby red in color, with hints of red fruits and hazelnuts is well- balanced with impressive intensity and length. Some like it young, alluring and spontaneous. Others prefer it a little older, wiser, more complex, and more tender, too. The fact is that it can age for some three years, without losing anything of its youthful appearance, and it can then be savored in the prime of its age.
