DESCRIPTION: Grapes are selected from different vineyards, generally from the Côte de Beaune. They are hand-picked and then brought to the Drouhin cellars on the outskirts of Beaune. The destemmed grapes ferment in open wooden vats or stainless steel fermenters for two-to-three weeks. Part of the wine is aged in barrels, part in stainless steel tanks, so that the wine can acquire more complexity and keep its fruitiness.

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: It is not a wine we recommend to cellar for many years. Drink it when young, up to two or three years. We suggest serving Laforet at 59° F-61° F. Easy to match with food, it will be best with assorted deli meats, poultry, white meat, "au gratin" dishes, roasted meat and soft cheese.

TASTING NOTES: "A wine full of charm: bright ruby color and a nose rich with aromas of red fruit (raspberry, red currants, wild strawberry). On the palate, the wine is pleasant, fruity and refreshing, with light tannins and great elegance". - Véronique Boss-Drouhin

DESCRIPTION: Directly North of Beaune, Chorey is a tiny village surrounded by Savigny-les-Beaune, Aloxe-Corton and Ladoix. The soil is made of clay and limestone. The wine is often sold under the more common appellation of Côte-de-Beaune Villages. Joseph Drouhin owns 2.25 acres of vineyards in Chorey.

GRAPE VARIETY: Pinot Noir

FOOD PAIRINGS: Chorey needs a fine but simple cuisine: roasted poultry, grilled meats and soft cheese such as Reblochon or Brie.

TASTING NOTES: "A very pleasant wine. Bright, clear red color. Aromas are surprising in their intensity and fruit. On the palate, a tender, supple, graceful, round body. Very flavorful in the aftertaste, with a hint of blackberry jam. When the wine gets older, wild blackberry is the dominant aroma. After three or five years, the wine takes on a distinctive smell of truffle and undergrowth evolving towards notes of venison." - Véronique Drouhin-Boss

DESCRIPTION: Gevrey-Chambertin, a large wine-producing village in the Northern part of Côte de Nuits, has one of the greatest areas covered by vines in the whole of Côte d'Or. The soil is chalky, with a good covering layer of clayey marl which gives the wines their strength and roundness. Lying on a gentle slope, the vineyards are planted between 240 and 280 meters above sea level (720 to 840 feet). Gevrey-Chambertin can only be a red wine, with Pinot Noir the only grape variety.

GRAPE VARIETY: Pinot Noir

FOOD PAIRINGS: Gevrey-Chambertin could be served with beef bourguignon, coq au vin, grilled meat and great cheeses.

TASTING NOTES: "Gevrey-Chambertin is a wine with a beautiful, bright ruby color. Intensely fruity on the nose, the aromas are reminiscent of black cherry, wild blackberry and licorice. The woody character is subtle and marries delicately with the other aromas. As the wine evolves, there are more complex notes, such as mild spice, nutmeg and leather. Later still, mushroom and damp earth nuances make their appearance. Although present on the palate, tannin is never astringent but blends itself harmoniously with the natural freshness and "gras" (velvety texture) of the wine. The same aromas encountered earlier on the nose are found again in the aftertaste." - Véronique Boss-Drouhin

Cote de BeauneDESCRIPTION: The appellation "Cote de Beaune" is exclusively given to the wines produced in the Beaune area. They have a distinguished and specific character due to the soil and exposure of the vineyards. It also happens fairly often that the cuvées of young vines of Clos des Mouches are declassified to Cote de Beaune. As everywhere in the Cote d'or, Pinot Noir is the only grape variety used in this appellation. The soil, hard and chalky, is not very deep. The slope can be steep and the exposure is south/southeast.

FOOD PAIRINGS: Serve with roasted poultry, grilled meats and soft cheeses, such as Reblochon or Brie.

TASTING NOTES: "A true delight and a great harmony! A beautiful purple color. On the nose, delicate and fruity aromas such as strawberry and red currant. On the palate, the tannins are refined and lend a nice roundness to the body. Elegant aftertaste". - Véronique Drouhin-Boss

The 2013 is a firm and silky red with dried strawberry, spice and berry character. Medium to full body, bright finish. This often has some premier cru Beaune in it. Drink or hold.

Cote de Nuits-VillagesDESCRIPTION: This wine is an assemblage of villages from the southern end of the Côte de Nuits: Corgoloin, Comblanchien, Premeaux, Brochon, Couchey. The name "Côte de Nuits" comes from the town of Nuits-Saint-Georges, like Beaune, the capital of its own Côte (or slope). The soil is clay and limestone. It is an interesting wine combining the different characteristics of the various "terroirs"; fairly soft and rich wines in the south to more tannic wines with a strong structure in the north.

FOOD PAIRINGS: Excellent with light meats, roast chicken, and mild cheeses

TASTING NOTES: "A delicious red Burgundy, with harmonious flavors. Bright ruby color. DESCRIPTION: Nuits-Saint-Georges, an ancient city which, at one time, had a surrounding wall like Beaune, is the heart and capital of the Côte de Nuits. Its perfect exposure to the east gives the vineyards the capacity to produce splendid wines. The little stream flowing down from the Côte actually cuts this relatively large appellation in two. The Northern part, next to Vosne, produces wines that have the delicacy and finesse of that appellation. South of the stream, the soil is particularly stony and hard, with a type of white, grey, which you can actually see from the main road. These vineyards produce a firmer, more austere wine which takes longer to mature.

FOOD PAIRINGS: This great red Burgundy deserves a more traditional cuisine: red meat in light sauces, game, venison and ripe cheeses will create a rich tapestry of flavors worthy of a medieval feast.

DESCRIPTION: Aloxe-Corton is a village situated in the North of the Cote de Beaune. Its quality comes from the "terroir": chalky soil with a large proportion of iron giving it a dark brown color. This is where Pinot Noir is planted as opposed to the slope on the Pernand side where pure limestone is preponderant and serves as the realm of Chardonnay and the site of the famous Grand Cru vineyard, Corton-Charlemagne. .

DESCRIPTION: Chambolle is situated in the central part of the Côte de Nuits, surrounded by a sea of vines. Since the Roman times, the old Celtic village of Cambola has always been highly regarded for its vineyards. It is during the Middle-Ages that the monks perfected the art and technique of viticulture. Joseph Drouhin is an important propriétaire of various Premier Cru vineyards in Chambolle-Musigny. The Pinot Noir grape is vinified in the typical Burgundian style: slow maceration (18 days) with daily pumping over and punching down of the cap to extract the famed "gout de terroir" of Chambolle. After 18 months in barrels and fining with egg-whites, the wine is bottled.

GRAPE VARIETY: Pinot Noir

FOOD PAIRINGS: Chambolle-Musigny should be served with delicately prepared dishes, such as "Canard aux cerises" (duck cooked with cherries) or "Boeuf aux morilles" (beef with morels). The cheeses should be ripe but not too strong.

TASTING NOTES: The wines of Chambolle have always been highly prized for their finesse and elegance. The color is lovely. Aromas are very complex and evoke violet, cherries and humus, with blackberry and noble tannins coating the palate. Extremely well balanced, the wine has a very persistent, rounded finish. With age, the aromas turn to mushroom and underbrush, while conserving all their finesse.

DESCRIPTION: The location of the Chassagne Montrachet vineyard is south of Beaune, one of the last villages of the Côte de Beaune. Its name is derived from the Celtic word "cassanos", meaning "planted with oak trees." The appellation is planted with both Chardonnay and Pinot Noir. The soil consists of clay and limestone.

FOOD PAIRINGS: Enjoy with red meats, roast chicken, and mild cheeses.

TASTING NOTES: "Vivid red color. Intense and complex aromas, reminiscent of candied fruit or fruit jelly, raspberry, blackberry, and a light woody touch. As the wine ages, these aromas evolve towards subtle notes of mushroom and spices, such as nutmeg. When the wine is younger, the flavors highlight a nice framework marked by fine tannins. DESCRIPTION: The village of Morey may still be in the shadow of its more famous neighbors, Chambolle and Gevrey, yet there are some real treasures to be discovered. Such a vineyard is the Premier Cru Clos Sorbé, whose Pinot Noir vines are planted right in the middle of the village, on a gentle slope facing east.

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: When young, it is a perfect accompaniment to red meat, roasted or in sauces. Older, game and venison are particularly recommended. Tasted blind, Clos Sorbé is, more often than not, taken for one of its neighboring Grand Crus. Even if it does not belong to this highest ranking, there is no question that it amply deserves more recognition.

TASTING NOTES: "A really great wine, appreciated by the Burgundy connoisseur for the diversity of its aromas and flavors.It has a beautiful ruby color, a seductive nose dominated by aromas of wild cherry and spice, evolving towards leather. DESCRIPTION: Today, Pommard is one of the largest villages in Burgundy. The village is on a slope, in the middle of a group of vineyards facing east or southeast. The soil, a mixture of red clay and limestone, is responsible for the wine's original qualities: good color, intense bouquet and firm structure. Pommard can only be a red wine, produced from the Pinot Noir grape. To insure low yields, the vines are pruned very short, in the "Guyot" style. The grapes are picked by hand and put in small crates to avoid damage during transportation to the winery. The fermentation occurs in open wooden or stainless steel fermenters. The total maceration generally lasts 15 to 18 days. The wine is kept in barrels for 18 months before bottling. According to the vintage, it is sometimes better to wait at least two years before drinking the wine.

DESCRIPTION: Located nearly in the Southern end of the Côte de Beaune, after Chassagne-Montrachet, Santenay is a pretty, quiet village producing lovely red wines from Pinot Noir. It is a rather large appellation, with the vineyards having a more southerly exposure due to the change of direction of the Côte. The wines produced on this terroir have a remarkably deep red color and a very firm chewy structure which gives them excellent ability to age. At harvest time, the grapes are hand-picked. They ferment and macerate in open vats for a period of 14 to 18 days, depending on the taste and texture of the wine. The fermentation starts naturally and is conducted in the classical way, forcing the cap down and pumping over the juice. In traditional fashion, the wines are racked off in the spring and prior to bottling. Fining is done with egg whites.

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: It is a delicious example of Burgundy Pinot Noir, a good value and an excellent accompaniment to all kinds of cuisines.

TASTING NOTES: Joseph Drouhin's Santenay has an intense ruby-red color and the fragrances of cherries, raspberries and truffles. The tannins are usually supple. The finish, medium-long, is extremely pleasant and aromatic.

DESCRIPTION: Savigny is a charming village, tucked away in a little valley between Pernand and Beaune. A remarkable feature of the appellation is that the vineyards are planted on two hills with different exposures: North is the Vergelesses slope, producing delicate, perfumed wines: South is the start of the Beaune Côte, where the wines are more firmly structured. The red wines are made with the Pinot Noir grape. There is also a tiny production of white wines. The fermentation occurs in open wooden or stainless steel fermenters. The total maceration generally lasts 15 to 18 days. The wine is kept in barrels for 18 months before bottling.

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: As its close neighbor, Pernand-Vergelesses, Savigny goes very well with the simplest cuisine or the typical bistro fare. It represents excellent value and should be sought after for its inimitable "goût de terroir".

TASTING NOTES: Savigny les Beaune is a delicate and elegant wine showing intriguing spicy notes as well as wild berries. The spicy character is typical to that area. On the palate, the wine has considerable finesse and elegance. It develops harmoniously between three-to-ten years of age.

DESCRIPTION: the pretty village of Savigny-les-Beaune is nestled in a small valley north of Beaune. The Clos des Godeaux vineyard is favoured with an ideal south exposure. It is located at an altitude of 360m (1180 feet), next to the Clos des Lavières Premier Cru. It draws photographers from various parts of the world, attracted by the superb Burgundian « cabotte » (hut). Soil: marl and limestone from the Bathonian age; light soil with a reddish coloration, strewn with sharp stones. Drouhin estate : Biological and biodynamic cultivation. 1.6 ha (3.95acres).

GRAPE VARIETY: 100% Pinot Noir

FOOD PAIRINGS: It goes best with lamb, filet mignon, veal with wild mushrooms, roast chicken. An elegant cuisine, not too strong or spicy, is obviously a requisite.

TASTING NOTES: "Supple and feminine wine with a ruby colour. Elegant nose of small red berries and flowers possibly suggesting roses and spices. On the palate, the wine offers a ravishing and subtile intensity of blackurrant and raspberry aromas lingering on spicy notes. DESCRIPTION: In the Côte de Beaune, not far from Beaune, the lovely and tiny village of Volnay is surrounded by vineyards. The slope faces east/southeast and benefits from a privileged position and plenty of sunshine. From the village itself, the view is superb. Crowned by a limestone plateau, the Volnay vineyards have a subsoil of Argovian marlstone, and in the bordering parts of Pommard and Meursault, a layer of Bathonian limestone. Joseph Drouhin owns vineyards in Volnay but also buys grapes from excellent Premier Crus such as Volnay Chevret. The grapes, as delicate as the wines they produce, are handled with the utmost care.

FOOD PAIRINGS: With Volnay, such traditional Burgundian fare as pot-au-feu, coq au vin, beef bourguignon or any other slowly cooked stew like daube is heart-warming and delicious.

Vosne-RomaneeDESCRIPTION: North of Nuits-Saint-Georges, the village of Vosne-Romanée produces some of the best-known wines of Burgundy, Romanée Conti and Richebourg being the most famous.The clay and limestone soils are particularly well-suited to the production of great red wines. The unique grape variety used is the Pinot Noir. At Joseph Drouhin, we want all of our wines to be the best expression of their terroir, which is why typicity is very important. Grapes are picked by hand. Fermentation is traditionally in open wooden fermenters. The young wine then stays in barrels for an average of 18 months before being bottled.

FOOD PAIRINGS: Pinot Noir is well-suited to pair with poultry, beef, fish, ham, lamb and pork. It will play well with creamy sauces, spicy seasonings and may just be one of the world's most versatile food wines.

TASTING NOTES: "Supreme elegance! Beautiful color, with intense and bright reflections. The diversity of the aromas is striking: wild cherry, nutmeg, camphor wood, fine leather. Later on, the wine takes on a subtle aroma of truffle, producing the most varied palette. With its perfect balance between tannin and acidity, the wine has a fleshy, sturdy body.
